Bhuna is a cooking process where spices are gently fried in plenty of oil to bring out their flavour. The bhuna dish is an extension of that process where meat is added to the spices and then cooked in its own juices which results in deep strong flavours but very little sauce. ‘Bhuna‘ is a particular Asian cooking style where a sauce is reduced and reduced until it is so thick that it just clings to the meat, making the meat appear ‘browned’.

The spices used are cumin seeds, coriander seeds, mustard seeds, dried chillis, fennel and fenugreek seeds. These are crushed and fried. Shallots and chunks of ginger are added along with tomatoes. This creates the base to which the meat is added.

Lamb and chicken are popular meats in Bhuna sauces as are prawns.
