The Oyster mushroom is one of the most popular edible mushrooms throughout the world and is the no 1 eaten mushroom in China. The Oyster mushroom (Pleurotus) takes on many forms one of which is the Grey Oyster mushroom with a grey top to its cap with white gills below on a white stem.

In the wild the Oyster mushroom is a saprophyte living in the wild by decomposing organic material such as the cellulose and lignin in wood and other plant material. The oyster mushroom is an aggressive fungus and lives on all forms of cellulose so can be grown easily on substrates such as toilet rolls, coffee grounds, old books and newspapers as well as commercially on pasteurised straw and hard wood sawdust. Oyster mushrooms can be found growing in the wild on fallen hardwood trees at most times of the year depending upon the fluctuations in temperature and rainfall. They are best picked when their spores begin to drop as this is the point when the mushroom has the most flavour. The stems though can be tough and are usually not eaten.

The Grey Oyster mushroom is an attractive mushroom with a delicate flavour which can be eaten uncooked in cold dishes or cooked quickly in stir fries. Its delicate flavour can be enjoyed in omelettes of with scrambled eggs.
