The Yellow and Golden Oyster mushrooms are close relatives, the Golden Oyster Mushroom (Pleurotus citrinopileatus ) coming from Japan and its subspecies the Yellow Oyster Mushroom (Pleurotus cornucopiae) coming from Europe.

The Yellow Oyster mushroom is a cultivated mushroom which has a daffodil yellow coloured cap and pure white stems and gills. When fruiting they mushrooms almost look like flowers with dense groups of petal shaped caps that grow with a curved edge which flattens out when the yellow mushroom is ripe and about to release spores.

The Yellow Oyster mushroom has a delicate flavour and are added to stir fries late in the cooking stage as they cook rapidly. The stalks of the Yellow Oyster mushroom can be tough so are usually discarded and the caps simply torn up and cooked. As with all subtle flavoured mushrooms one of the best ways to sauté them is in butter with herbs. Yellow Oyster mushroom omelettes are also delicious or the sautéed mushrooms can be folded into scrambled eggs and served with fresh bread.

In the wild the Pleurotus is a genus of mushroom that grows on dying trees so it is also known as the tree mushroom or abalone mushroom. The cultivated versions of the Pleurotus genus are some of the most popular and therefore commonly grown mushrooms in the world.
